Zucchini Bread

1. Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
3. In a large mixing bowl, combine the melted butter, vegetable oil, sugar, and light brown sugar. Beat until well combined.
4. Add the eggs and vanilla extract to the wet mixture and beat until smooth.
5. Mix in the milk or applesauce until well incorporated.
6. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
7. Gently fold in the shredded zucchini until evenly distributed throughout the batter.
8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
9. Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
10. Remove the pan from the oven and let the bread cool in the pan for 10 minutes.
11. Transfer the zucchini bread to a wire rack to cool completely before slicing and serving.
