Okra patties
In a large bowl, combine the finely chopped okra, cornmeal, all-purpose flour, finely chopped onion, and finely chopped green bell pepper.
In a separate bowl, whisk together the beaten egg, milk, baking powder, salt, black pepper, and cayenne pepper (if using).
Pour the wet ingredients into the bowl with the okra mixture, stirring until well combined. The batter should be thick but not too dry.
Heat the vegetable oil in a large skillet over medium heat.
Drop spoonfuls of the batter into the skillet, pressing them down slightly to form patties. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
Transfer the cooked okra patties to a paper towel-lined plate to drain any excess oil.
Serve the okra patties hot, as a side dish or appetizer. Enjoy!
