Jalapeno Peach Chicken

Season the chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
Prepare the Sauce:
In the same skillet, add the red onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent.
Add the jalapenos and red bell pepper, and cook for another 2 minutes.
Pour in the apple cider vinegar, chicken broth, and honey. Stir well to combine.
Add Peaches:
Add the peach slices to the skillet and gently stir to coat them in the sauce.
Allow the sauce to simmer for 5-7 minutes, until it thickens slightly and the peaches are tender.
Combine and Cook:
Return the cooked chicken breasts to the skillet.
Spoon the peach and jalapeno mixture over the chicken.
Simmer for an additional 5 minutes, allowing the flavors to meld together.
Garnish and Serve:
Garnish with freshly chopped cilantro.
Serve hot with your choice of side dishes, such as rice or a fresh salad.
