Baked Fish with Cherry Tomatoes and Olives

Preheat your oven to 400℉ (200℃).
Season the Fish:
Mix all the ingredients for the fish seasoning in a small bowl. Save 1 teaspoon of the seasoning mix for the tomatoes.
Rub both sides of the fish fillet with the seasoning mixture.
Sear the Fish:
Heat the cooking oil in a pan over medium heat.
Sear both sides of the fish fillet for 1 minute each. The fish should not be fully cooked, but it should have a charred look.
After both sides are charred, remove the fish from the pan and set it aside.
Prepare the Tomatoes and Olives:
In the same pan over medium heat, add all the ingredients for the tomato mix (except the butter) and sauté for about 3 minutes, stirring continuously.
Add the butter to the pan and stir until melted and combined with the tomatoes and olives.
Bake the Fish:
Place the fish in the middle of the pan with the tomato mixture. Ensure your pan is oven-safe; if not, transfer everything to a baking sheet or oven-safe pan.
Put the pan in the preheated oven and bake at 400℉ (200℃) for 10 minutes, or until the fish is cooked through.
