During the last minute of cooking, add the butter, crushed garlic, and herb sprigs to the skillet. Baste the steaks with the melted butter and garlic herb mixture.
Remove the steaks from the skillet or grill and let them rest on a cutting board for 5-10 minutes to allow the juices to redistribute.
