Walking Taco Casserole
1. Preheat oven to 375°F (190°C).
2. In a large skillet over medium heat, brown the ground beef. Drain excess fat.
3. Stir in taco seasoning, black beans, corn, and diced tomatoes with green chilies. Bring to a simmer and cook for 5 minutes. Season with salt and pepper to taste.
4. In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips, followed by the beef mixture. Spread sour cream over the beef, then sprinkle with one cup of cheddar cheese.
5. Repeat the layers with the remaining tortilla chips, beef mixture, and cheddar cheese.
6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
7. Garnish with green onions and cilantro before serving.
