Surf & Turf Skewers meet Chimichurri
Get the skewers ready:
Preheat your grill to medium-high heat.
Saute the shrimp, beef cubes, cherry tomatoes and mushrooms alternatively on the skewers.
Grease the skewers with olive oil and season with salt and pepper.
Grill the skewers for 6 to 8 minutes, flipping occasionally, until the shrimp are pink and opaque and the meat is cooked to your liking.
Prepare the Chimichurri Sauce:
In a bowl, combine parsley, oregano, garlic, olive oil, red wine vinegar, red pepper leaves, salt and pepper. Mix it up well.
Let the sauce sit for at least 10 minutes to allow the flavors to blend.
Service:
Serve the skewers hot, drizzled with chimichurri sauce or with the sauce on the side for dipping.
