Surf and Turf Baked Potatoes
1. Preheat oven to 400°F (200°C).
2. Rub the potatoes with olive oil, salt, and pepper. Pierce them with a fork a few times and bake for 1 hour, or until tender.
3. While the potatoes are baking, season the steak cubes with salt and pepper. Heat a skillet over medium-high heat and cook the steak to your desired doneness. Set aside.
4. In the same skillet, add the lobster meat and garlic. Cook for about 2 minutes, or until heated through. Set aside.
5. Once the potatoes are done, let them cool slightly. Cut a slit on the top of each potato, and carefully scoop out the insides, leaving a thin layer of potato.
6. In a bowl, mix the potato insides with butter, sour cream, half of the chives, salt, and pepper. Fold in the steak and lobster meat.
7. Stuff the mixture back into the potato skins, top with cheddar cheese, and return to the oven. Bake for an additional 15 minutes, or until the cheese is melted and bubbly.
8. Garnish with the remaining chives before serving.
