Old-School Spaghetti

- Bring a pot of water to a boil, add salt, and cook pasta according to package instructions. Drain and set aside.
2. **Prepare Baking Dish:**
- Preheat oven to 350°F (175°C).
- Grease a 9 x 12-inch baking dish with 2 tablespoons of butter.
3. **Cook Vegetables:**
- Heat olive oil in a large skillet over medium heat.
- Sauté the diced green pepper, diced onion, and sliced mushrooms for 3-4 minutes until softened.
4. **Cook Beef:**
- Add the ground beef to the skillet with the vegetables. Season with kosher salt and black pepper.
- Cook until the beef is no longer pink, breaking it into small pieces as it cooks. Drain any excess fat.
5. **Add Sauce:**
- Pour the pasta sauce into the skillet with the beef and vegetable mixture. Stir to combine and heat through.
6. **Prepare Cheese Mixture:**
- In a medium mixing bowl, combine the softened cream cheese, sour cream, and cottage cheese.
- Use a hand mixer or immersion blender to blend until smooth.
7. **Assemble:**
- Spread half of the cooked pasta in the bottom of the greased baking dish.
- Evenly spread the cheese mixture over the pasta.
- Add the remaining pasta on top, followed by the beef and sauce mixture.
8. **Bake:**
- Cover the dish with foil (spray foil with oil to prevent sticking).
- Bake for 20 minutes.
- Remove foil, sprinkle grated cheese on top, and return to the oven for another 10-15 minutes until the cheese is melted and bubbly.
9. **Serve:**
- Let the dish rest for 5 minutes before serving.
