Garlic Butter Steak and Potatoes Skillet

1. Heat the olive oil in a large skillet over medium-high heat.
2. Season the steaks with salt and pepper and add to the skillet, cooking until a golden crust forms, about 4-5 minutes per side for medium-rare. Remove and set aside.
3. In the same skillet, add the potatoes, cut-side down, and cook until golden and crispy, about 10 minutes.
4. Move the potatoes to one side of the skillet and add the butter, garlic, thyme, rosemary, and parsley. Stir the herbs and garlic for about 1 minute until fragrant.
5. Pour in the beef broth and deglaze the pan, stirring to lift any browned bits off the bottom.
6. Return the steaks to the skillet, spooning the garlic butter and herbs over them. Cook for another 2-3 minutes, until the steaks are heated through.
7. Serve the steaks and potatoes with the sauce from the skillet poured over them.
