Elegant Pretzel Blackberry Cheesecake Bars
Preheat the oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides.
In a medium bowl, combine the graham cracker crumbs, crushed pretzels, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust.
In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Spread half of the cream cheese mixture over the crust. Spoon half of the blackberry preserves over the cream cheese layer and swirl gently with a knife. Repeat with the remaining cream cheese mixture and blackberry preserves.
Bake for 35-40 minutes, or until the center is set. Allow to cool completely in the pan on a wire rack.
Once cooled, refrigerate for at least 2 hours or overnight.
Lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars and top each bar with fresh blackberries.
