Delightful Bananas Foster Cobbler
Preheat the oven to 350°F (175°C).
In a skillet, melt the butter over medium heat. Add brown sugar and cinnamon, stirring until the sugar is dissolved and the mixture is bubbly.
Add the banana slices and cook for 2-3 minutes until they are caramelized. Carefully add the rum and vanilla extract, then cook for another 1-2 minutes. Remove from heat.
In a separate bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in the milk until just combined.
Pour the batter into a greased 9x13 inch baking dish. Spoon the banana mixture over the batter.
Bake for 35-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Serve warm with a scoop of vanilla ice cream.
