2 live lobsters (about 1 1/2 pounds each) or 1 pound cooked lobster meat
12 ounces linguine or fettuccine
2 tablespoons olive oil
4 tablespoons unsalted butter, divided
1 small shallot, finely chopped
2 garlic cloves, minced
1⁄2 cup white wine
1 cup heavy cream
1⁄2 cup grated Parmesan cheese, plus more for serving
1⁄4 teaspoon dried thyme
2 sprigs tarragon
1 pinch red pepper flakes (optional)
1⁄2 teaspoon salt, or to taste
1⁄4 teaspoon freshly ground black pepper, or to taste
1⁄4 cup chopped fresh parsley
Zest of 1 lemon
1 tablespoon lemon juice
