2 medium apples, grated
2 large eggs
1/2 cup of natural yogurt
A pinch of cinnamon (optional for extra flavor)
Coconut oil or butter, for cooking
Instructions:
Prepare the Batter: In a large mixing bowl, combine the grated apples, eggs, and yogurt. If you like a hint of spice, add a pinch of cinnamon. Mix well until you have a uniform batter. The natural sweetness of the apples and the creaminess of the yogurt will make the batter both tasty and moist.
Cook the Pancakes: Heat a non-stick skillet over medium heat and add a small amount of coconut oil or butter to coat the bottom. Pour small ladles of the batter into the skillet, forming pancakes. Cook for about 2-3 minutes on one side, or until you see bubbles forming on the surface, indicating it’s time to flip. Cook for another 2 minutes on the other side or until golden brown.
Serve Warm: These pancakes are best enjoyed fresh from the skillet. You can top them with a dollop of yogurt or a sprinkle of nuts and seeds for added texture and nutrition.
