1. Combine all the dressing ingredients (lemon juice, Dijon mustard, garlic, maple syrup, rice vinegar, and olive oil) in a large bowl. Season well.
2. Add the kale and shallot to the bowl. Massage the dressing into the kale leaves until they soften and turn dark green, about 2-3 minutes.
3. Add the beetroot, cranberries, carrots, nuts, and goat's cheese (if using). Toss together until everything is evenly coated, and season.
4. Serve straight away.
