1. Preheat your oven to 300Β°F (150Β°C). Grease a muffin tin or silicone muffin molds.
2. In a blender, combine eggs, cottage cheese, Gruyère cheese, salt, and pepper. Blend until smooth.
3. Pour the egg mixture evenly into the muffin tin or molds.
4. Add crumbled bacon and chopped spinach to each mold.
5. Place the muffin tin in a larger baking dish filled with about an inch of water to create a water bath.
6. Bake for 30-35 minutes, or until the egg bites are set and slightly golden on top.
7. Allow to cool for a few minutes before removing from the molds.
