Steak Oscar Recipe
Wash the asparagus, place in a microwaveable dish with water, and steam in the microwave.
Open and drain the crab meat, removing any cartilage. Set aside.
Mix flour, salt, and pepper in a dish. Coat the steaks in this mixture.
Melt butter with oil in a pan over medium heat. Cook the steaks for about 5 minutes per side, or until desired doneness.
In a small pot, melt butter for the Hollandaise sauce. Blend egg yolks, lemon juice, and hot sauce in a blender. Slowly pour in hot butter while blending until smooth.
Heat the crab meat in the microwave for less than a minute.
Place 4 asparagus spears on each steak, top with crab meat, and drizzle with Hollandaise sauce.
Serve immediately, garnishing with freshly ground pepper.
