Mutton Curry

1. **Marinate the mutton:** In a bowl, mix the mutton pieces with salt, turmeric powder, and half of the minced ginger and garlic. Let it marinate for at least 30 minutes.
2. **Heat oil in a pan** over medium heat. Add cumin seeds and mustard seeds. Let them crackle.
3. **Add chopped onions** and sauté until they turn golden brown.
4. **Add remaining ginger, garlic,** and green chilies. Sauté for a minute until fragrant.
5. **Add chopped tomatoes** and cook until they turn mushy and the oil starts to separate.
6. **Add the dry spices:** turmeric powder, coriander powder, cumin powder, red chili powder, and garam masala. Sauté for 1-2 minutes until the spices are roasted and aromatic.
7. **Add marinated mutton pieces** to the pan. Increase the heat to medium-high and brown the mutton for about 5-7 minutes, stirring occasionally.
8. **Add water** to the pan, enough to cover the mutton pieces. Bring it to a boil.
9. **Reduce the heat to low**, cover the pan, and let it simmer for 1.5 to 2 hours or until the mutton is tender and cooked through. Stir occasionally and add more water if needed during cooking.
10. **Check for seasoning** and adjust salt and spice levels according to your taste.
11. **Once mutton is cooked**, garnish with fresh coriander leaves.
12. **Serve hot** with rice, naan, or roti.
