Maple & Chilli Glazed Leg of Lamb
Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6.
In a small bowl, mix together the minced garlic, chopped rosemary, olive oil, salt, and pepper.
Rub the mixture all over the leg of lamb, ensuring it's well coated.
Place the lamb in a roasting tin and roast in the preheated oven for 20 minutes.
While the lamb is roasting, prepare the glaze. In a saucepan, combine the maple syrup, soy sauce, chopped chillies, and Dijon mustard. Heat gently until the mixture is smooth and slightly thickened.
Reduce the oven temperature to 180°C (160°C fan)/350°F/gas mark 4.
Brush the lamb with the maple and chilli glaze. Continue to roast, basting with the glaze every 15 minutes, for about 1 hour and 30 minutes, or until the lamb is cooked to your desired level of doneness.
Remove the lamb from the oven, cover loosely with foil, and let it rest for 20 minutes before carving.
