German Potato Pancakes

Grate the potatoes and onion into a large bowl using the coarse side of a grater.
Squeeze out as much liquid as possible from the grated potatoes and onion using a clean cloth or by pressing them in a sieve.
Return the dry mixture to the bowl and stir in the eggs, flour, salt, and pepper until well combined.
Heat oil in a large skillet over medium-high heat.
Scoop large spoonfuls of the potato mixture into the skillet, flattening them with the back of the spoon to form pancakes.
Fry for about 3-4 minutes on each side or until the pancakes are golden brown and crispy.
Drain on paper towels.
Serve hot with applesauce and sour cream.
