Chicken Scampi with Garlic Parmesan Rice
In a large skillet, heat the olive oil over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and cook for 1 minute, until fragrant.
Add the chicken broth, white wine, Parmesan cheese, dried parsley, dried basil, red pepper flakes, salt, and black pepper. Stir to combine.
Bring the mixture to a simmer and cook for 3-4 minutes, until the sauce has slightly thickened.
Return the chicken strips to the skillet and toss to coat in the sauce.
In a separate pan, melt the butter and add the cooked rice. Stir to coat the rice in the butter and cook until warmed through.
Serve the chicken scampi over the garlic Parmesan rice. Garnish with additional Parmesan cheese, if desired.
