CHICKEN GRAVY WITH FRENCH FRIES

Step 1: Prepare the French Fries
Preheat your oven to 425°F (220°C). Toss the cut potatoes with vegetable oil and spread them in a single layer on a baking sheet. Bake for 25-30 minutes, turning occasionally, until golden brown and crispy. Season with salt and garnish with chopped fresh parsley.
Step 2: Bread the Chicken
In a shallow dish, combine the flour, salt, black pepper, and paprika. In another dish, whisk together the eggs and milk. In a third dish, mix the breadcrumbs and grated Parmesan cheese. Dredge each chicken breast in the flour mixture, then dip in the egg mixture, and finally coat with the breadcrumb mixture.
Step 3: Cook the Chicken
In a large skillet, heat the butter and olive oil over medium-high heat. Add the breaded chicken breasts and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Step 4: Make the Gravy
In the same skillet, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until it forms a roux and turns a light golden brown. Gradually add the chicken broth, whisking continuously to avoid lumps. Stir in the heavy cream, onion powder, garlic powder, salt, and pepper. Bring to a simmer and cook until the gravy thickens, about 5-7 minutes.
Step 5: Serve
Place the cooked chicken breasts on plates and pour the gravy over the top. Serve with the crispy French fries on the side. Enjoy!
