Before we get into the nitty-gritty of the recipe, let’s gather our ingredients:
For the Energy Bites:
- 80 gr. (2.8 ounces) dates.
- 70 gr. (2.5 ounces) plums.
- Cold water (for soaking plums).
- 100 gr. (3.5 ounces) peanuts.
- 30 gr. (1 ounce) rice cake.
- 20 gr. (0.7 ounces) dried coconut.
- 1 teaspoon ground ginger.
- ½ teaspoon cinnamon.
- Juice of half an orange (approximately 50 ml. or 1.7 fl oz).
For the Chocolate Coating:
- 170 gr. (6 ounces) sugar-free white chocolate.
- 1 tablespoon vegetable oil.
The Preparation Process
Now, let’s go step by step through the process of creating these delightful Super Energy bites.
Preparing the Plums and Dates
- Start by soaking 70 gr. of plums in cold water for 15 minutes.
- While the plums are soaking, roast 100 gr. of peanuts in a pan until they turn golden brown.
- Grind the roasted peanuts in a blender until you have a fine consistency.
- Set aside 2 tablespoons of the ground peanuts for garnish.
- Add the soaked plums to the blender.
Blending the Ingredients
- Remove the pits from the dates and add them to the blender.
- Add 30 gr. of rice cake and 20 gr. of dried coconut to the blender as well.
- Include 1 teaspoon of ground ginger and ½ teaspoon of cinnamon for added flavor.
- Squeeze the juice of half an orange into the blender (approximately 50 ml. or 1.7 fl oz).
- Blend all these ingredients until you have a well-mixed, dough-like consistency.
