Ingredients
– 450 g of puff pastry
– 1 egg yolk
– 1 tablespoon of milk
For the hazelnut cream:
– 100 g of hazelnut powder
– 100 grams of ice sugar
– 70 grams of butter
– 1 œuf
– 10 g de maïzena
For the pastry cream:
– 25 cl of milk
– 25 grams of flour
– 50 grams of sugar
– 1 egg yolk
– 1 vanilla scoop
Preparation:
Hazelnut Cream:
Incorporate icing sugar, hazelnut powder and corn in the butter.
Add the egg and mix but do not whisk so that you do not get too much air in the cream, which would cause it to inflate too much when cooking.
Book at the cost.
